  4. Once the curd is set, transfer it to the bilona and churn it until the butter separates from the buttermilk.
  5. Collect the butter and put it in a muslin cloth or strainer to drain the buttermilk.
  6. Heat the butter on low flame in a heavy-bottomed pan until it melts and starts to foam.
  7. Continue heating the butter, stirring occasionally, until the moisture evaporates, and the ghee turns golden brown.
  8. Strain the ghee through a fine sieve to remove any remaining impurities.
  9. Store the bilona ghee in a clean, airtight container at room temperature.
